Sweet chestnut shells (Castanea sativa Mill.) as a valuable resource: antioxidant activities, polyphenol content, and mineral composition

Súhrn: Sweet chestnut (Castanea sativa Mill.) is a key tree species in Europe, with its shells serving as a nutrient-rich byproduct. The aim of this research is to analyse the shells of sweet chestnuts from various locations in Slovakia to find out how important they are in terms of reuse. Using spectrophotometric methods, the total content of polyphenols, antioxidant activity, and mineral substances were determined. Total content of polyphenols (expressed as gallic acid equivalents) ranged from 6.17 g·kg-1 dry weight (DW) in Modrý Kameň location to 27.94 g·kg-1 DW in Rovňany location. Antioxidant activity was determined using three assays based on free radical scavenging capacity, the ability to neutralise synthetic radicals, and reduction of ferric ions.
